The reason you started brewing?
Just as a part-time job in university, then it grew into a passion for beer and brewing
What was the inspiration behind your brewery?
To create traditional English style ales and push experimentation with new and classic styles. Our name comes from the county we are in and Wellingtons are another name for rubber boots in England.
What are the biggest challenges for you as a brewer in Ontario?
Getting our beer into different markets and letting people know we exist.
What kind of music do you listen to when you are working?
Pop or classic rock, anything easy to sing to.
Do you have a way to organize your days to optimize your work?
I check in with everyone in the morning and start trying to assist in any issues that are happening. I try to look at email as little as possible:)
What tips would you give to improve productivity?
No cell phones
What is the best advice anyone has given you?
Do not ask anyone to do anything you are not willing to do yourself.
What is your routine start and end of the day?
Coffee to start, beer to end.

What advice would you give to someone who wants to start a brewery?
Be prepared to work long hours and learn how to get excited about packaging and cleaning!
