What’s a Kettle Sour?
To produce acidity in this beer, we used a technique referred to as “kettle souring”. This involves pitching lactobacillus (a bacterial culture) in the kettle and allowing it to reduce the pH (measure of acidity) of the wort overnight. Once the wort has reached the desired pH, we boil the wort to stop the souring process and continue the brew as we normally would. This process takes a few days, so we often brew our kettle sours on Fridays, leave them to sour in the brew kettle over the weekend and then cast into the Fermenter on Monday mornings.
