Lode & Stijn – European cuisine in Berlin-Kreuzberg

Chefs Lode van Zuylen and Stijn Remi opened their eponymous restaurant Lode & Stijn in Berlin’s Kreuzberg neighborhood in 2016. Their casual fine dining establishment is dedicated to produce- and producer-centered cuisine, characterized by ingredient-conscious preparation and clear flavor profiles, a culinary style inspired by the chefs’ prior work in restaurants in Amsterdam, Hamburg, Maastricht, Prague, Stockholm, and San Francisco.

Following a brief closure for renovation, Lode & Stijn reopened in February 2019.

With the renovations, the restaurant’s kitchen was expanded and professionalized. To create space for the expansion, the open counter bridging the kitchen and a secondary dining area was removed. The bar in the main dining room gave way to additional seating that keeps in line with the restaurant interior’s style: simple wooden tables and chairs, benches upholstered in dark green and a geometric wall element made of wine-red fabric. The toilet area also received a complete overhaul, with semicircular mirror elements and a new color concept in striking coral and olive. The renovation was handled by Berlin’s Ester Bruzkus Architekten, with design and furnishings provided by Amsterdam design studio La Bolleur.

On the culinary side, Lode van Zuylen and Stijn Remi remain as true as ever to their focus on produce, giving equal reverence to the origins and growing conditions of such humble ingredients as the beet and potato as to the complex terroir of wine. Central to their creations are seasonality and a plant-based focus. Out-of-season ingredients are incorporated in their preserved form, a practice that, together with the house-baked bread, attests to the artisanal principles of the kitchen.

All dishes are served as part of a set menu, which can vary on the basis of daily availability. The menu is complemented by artisanal wines and beers selected by sommelier Ole Ortmann, with wines served as a course-by-course pairing or by the glass. The frequently changing wine list focuses on small European producers, with origin stories, profiles and unique characteristics shared with guests at the table.

Lode van Zuylen and Stijn Remi began their culinary training in 2005 in ’s-Hertogenbosch, the Netherlands. They subsequently worked together at Restaurant Artisan (NL), followed by stints at the former Allegro (CZ), RUTZ (DE), Beluga (NL) and Mathias Dahlgren (SE), amongst others.
