How long have you been brewing beer and what are your brewery’s core values?
Le Boswell, located on Avenue du Mont-Royal in Montreal, has been brewing since 2015. Philippe St-Cyr (founder and co-owner) has been brewing since 2008 and Julien Savoie (head brewer) since 2016. Our main mantra is to create recipes that inspire us as a team, and beers that we want to drink. We also always have in mind respect for know-how, history and brewing traditions.
What are the main types of beer you brew?
As we appreciate a variety of styles (American, English, Lagers, sour, seasonal and some oak barrels), we brew a varied selection of beers. It is also important for us to offer our customers products that cover a wide range of tastes. On the other hand, we brew a little less on the Belgian side and we stay away from beer smoothies.
What makes your beer unique? Are you bringing a special beer to Mondial that we should try? If so, what is it and what can you tell us about it?
Our beers stand out because – from recipe to release – we focus on simplicity, balance, and authenticity. Our plain and simple-looking cans, whose color has been carefully chosen to faithfully represent the product, are easily spotted in the various specialized convenience stores that offer our range. For those who arrive early at the Mondial, we will have a very small quantity of our Double Café Rico Breakfast Stout, brewed with coffee roasted especially for us by our friends at Café Rico. This dark, mellow, opaque, and dense beer is the big sister of our CRBS, one of the first recipes to have been brewed at Boswell. We want it warmer and more alcoholic. Its aromas are toasted and softly chocolatey. In short, a big gun that makes our customers happy and unanimous within our team. We also have a small batch of DIPA in store for you which is absolutely worth the detour!
What are the plans for the future?
In addition to the brewery located on Mont-Royal, where we produce our selection of cans, we recently opened Boswell Brasserie & Boutique in Saint-Bruno-de-Montarville.
This new address revolves around two adjacent premises: a dining room with a brasserie on one side, and a shop specializing in the art of local aperitifs on the other. This brewery will undoubtedly allow us to test new recipes in the future by making smaller brews.
In-store, we obviously have the opportunity to publicize our range of canned beers, in addition to welcoming guest breweries, cider houses, and Quebec vineyards as well as a panoply of other local gastronomic products. We also work with several convenience stores and grocery stores in the greater Montreal area and intend to continue to develop our network in the coming years, in order to make Boswell known to a greater number of enthusiasts.
