Schilling Beer Co. is a modern European-inspired small-batch brewery centered on family, community, and excellence. Founded in 2013 by the Cozzens family and their long-time friend, John Lenzini – Michigan natives who moved to the North Country over 15 years ago – the Schilling name honors the Cozzens’ beloved late grandfather, Dr. R.J. Schilling. It also reflects the continental European experiences and inspirations foundational to the design of our beers and brewery.

These beers reflect our experiences of living and traveling extensively throughout continental Europe, the warmth of family and friendships, and the values and intentionality that define our beers and our future.
LAGERS & EUROPEAN ALES
We brew on a custom North American-built five-vessel, decoction-capable, 20-barrel brewhouse. We designed and built this unique system in order to generate the depth of character that you see today across the spectrum of our beers. This distinct investment in quality sets Schilling Beer Co. apart.
SPONTANEOUS & MIXED FERMENTATION ALES
We maintain a vibrant and growing wild/spontaneous beer program on the river level of our production brewery. We also regularly condition ‘clean’ beers in foudres and other oak vessels in different areas of our production facility to promote best practices.
RESILIENCE AMERICAN ALES
Resilience is our American Ale series focused on modern IPAs. These beers are intended to showcase various hops, experimental blends, and other American ales through the use of expressive and experimental modern-day yeast strains.
