How long have you been brewing and what are the core values of your brewery?
Brandon has been brewing beer professionally for 8 years and home brewing for around 11 years before that.
The core value of our brewery is that beer is for everyone, so everyone is welcome here. We really care about the people who walk through our door and we want to create a safe space for each of them. People will always be more important than beer and profits.
What are the main types of beer you brew?
We brew true-to-style traditional craft beer, with a mostly west coast influence. Our mainstays are Cache Kölsch, Persister Pale Ale, Retrogression West Coast IPA, Succession New England IPA, Circinate Dry Hop Sour, and Basal Brown Ale. We also frequently have quite a few rotating seasonals on tap, from saisons and dark milds to Cold IPAs, stouts, and Brett IPAs.
What makes your beer Unique? Are you bringing any special beer at the Mundial that we should try?
As our beer is true to the style it is somewhat not unique in that regard. But because Brandon is so meticulous with his recipe development, techniques, water chemistry, and ingredients chosen, it is just delicious beer. When you have our West Coast IPA you will instantly say, yes that is a West Coast IPA. Not “Oh that leans a little modern or That’s a little hazy”. So we are somewhat “unique” in that regard, but we aren’t reinventing the wheel either; we just try to brew the best beer we possibly can in the most true-to-style way we can.
We are bringing our Basal Brown Ale which won the Canada Beer Cup this year. This is an American Brown Ale so it has a slightly bitter finish to it, as opposed to the English Brown Ale with no bitterness on the end. It is roasted, malty, with a hint of coffee, then ends with a slight bitterness. Browns never get a lot of love, but this has a really nice depth to it. It is a beer that you can sip and think about but it is also a beer you can crush and enjoy more than one.
What are the plans for the future?
Our plans for the future is to pretty much stay the course that we are on. We are a hyper-local neighborhood brewery that really only services our city and a couple of small towns around us. We really believe in building the community and neighborhood around us so we aren’t very interested in wide distribution or growing much larger. We want people to come here, enjoy the cozy taproom, and have a great conversation around one of our beers.
